Potato spud cake balls

Very simple dessert that you and your kids will love!

Potato Spud Cake balls

Sponge cake that's made from a 12 egg Simple Sponge


Buttercream

3-4 sticks of unsalted butter
1- 1 1/2, 14oz can of sweetened condensed milk or dolce de leche
2-3Tbsp coco powder
2 Tbsp rum

Break up the sponge cake in to small pieces.
Put the butter in a mixer bowl, whisk on high speed until light and fluffy.
Add sweetened condensed milk and when you add most of the milk taste and see if it's set enough of not then add more and taste after every addition.
At this point of you plan to decorate the spuds then take about 3 Tbsp of cream to the side.
Start adding the coco powder, blend very well.

Start adding the cream to the cake crumbs until everything cooked together. Don't add too much cream or the spuds won't hold together.
Now roll them in to potato shapes and roll in coco powder.
At this point you can leave them as is or you can add a little decoration on top.

Simple Sponge

You can use this cake base for a lot of different cakes by just changing the icing.

For the perfect sponge you will need to take however many eggs you want to use, separate egg whites from egg yolks. Measure the egg whites in a cup, and that is how much sugar and flour you'll need.


This recipe is just how i make this cake with my measurements.

12 eggs (room temp)
1 1/2 cup sugar
1 1/2  cup flour
1tsp Vanilla 

preheat over to 350F
Whisk your eggs until light and fluffy. 
Add sugar slowly.
Turn mixer to the lowest speed and slowly add flour. You can do this step by hand just fold in the flour.
Pour the batter in to your cake pans, you need either 2, 8in -10in pans whichever you prefer.
Bake 25-40 mins test the cake by touching the top of the cake. When taking the cake out of the oven be careful not to tap or hit the cake too hard on anything or your cake will deflate.
